To prepare your shredded chicken, first cook the chicken with your preferred method. (Instant pot: Add 1 cup of water to the Instant Pot, place chicken on a trivet and pressure cook for 22 minutes. Stove top: bring a pot of water to a boil and boil chicken for ~15 minutes or until cooked through. Oven: bake chicken at 350 for ~30 minutes or until cooked through.) Once chicken is cooked use two forks to shred it or use electric hand beaters for easy shredding!
Combine all ingredients for the buffalo shredded chicken in a bowl, set aside.
To assemble your wrap when ready to eat place ~1/3-½ cup of the buffalo chicken, ¼ cup of lettuce, ~2 tbsp blue cheese, ~2 tbsp carrot, and 1 tbsp of green onion onto one wrap. Wrap it up and enjoy!
