Cranberry Chicken Quesadilla

This cranberry chicken quesadilla is the perfect combination of sweet, savory, and ooey gooey melty cheese. It is also quick & easy and can be prepared in 15 minutes or less!

Ingredients
  

  • 1 large flour tortilla
  • ¼ cup canned cranberry sauce
  • ½ cup brie cheese sliced
  • ¾ cup rotisserie chicken shredded or sliced
  • 2 tablespoons red onion sliced
  • ½ apple sliced
  • Handful of arugula

Instructions
 

  • On a clean surface or cutting board, lay out one flour tortilla and begin assembling your toppings. Start by spooning a layer of cranberry sauce evenly over one half of the tortilla. Layer the brie cheese, chicken, red onion, apple slices, and arugula on top making sure toppings are spread evenly on one half of the tortilla.
  • Carefully fold the tortilla and transfer to a skillet or grill pan.
  • Heat the skillet over medium-high heat and use a spatula or plate to press down and flatten the tortilla so that its contents are evenly distributed and cook evenly.
  • Cook for about 3-4 minutes or until the cheese starts to get melty and the bottom of the tortilla turns lightly golden brown.
  • Carefully flip the quesadilla from the open end to prevent the contents from spilling out.
  • Once the other side is golden brown, set aside and let cool for a few minutes before slicing in half or into quarters. Serve and enjoy!

Notes

Recipe Notes:

  • If you don’t have arugula on hand, any other green like spinach or kale would also work well for this recipe 
  • To add some spicy flare you can mix in a teaspoon or two of chopped jalapeno with the cranberry sauce. 
  • If you prefer to make your own homemade cranberry sauce, to a sauce pan you can combine 3 cups of fresh or frozen cranberries with 1 cup of sugar, 1 cup of water, 2 tablespoons of orange juice, zest of 1 orange, and a pinch of cinnamon. Simmer on the stove top for 10-15 minutes until it creates a thick and sticky sauce!
