This smoked salmon and cottage cheese sandwich combines the richness of smoked salmon, with the creaminess of cottage cheese (or cream cheese), and the freshness of arugula and cucumber. It's a light and delicious option for a quick and satisfying meal.

- 1/4 cup cottage cheese can sub cream cheese if you wish
- 2 slices bread
- 4 oz smoked salmon
- 2 tbsp red onion
- 1/4 cup english cucumber thinly sliced
- 1 cup arugula and spinach mix
- 1/4 tsp dried dill
Prepare the cottage cheese spread: in a small bowl, mix the cottage cheese (or cream cheese) with dried dill, salt, and black pepper. Stir until well combined. Set aside.
Assemble the sandwich: spread a generous layer of the cottage cheese mixture on each slice of bread.
Layer the Ingredients on top of the cottage cheese mixture. Arrange the smoked salmon, red onion, and cucumber.
Finish by placing a generous amount of the arugula and spinach mix and enjoy!
