Ingredients
  

  • 14 oz firm tofu
  • 2 tsp sesame oil
  • 1 tbsp cornstarch
  • 2 tbsp teriyaki marinade
  • 1 cup minute rice dry
  • 1 bagged Asian salad kit

Instructions
 

For The Tofu

  • Press the tofu. To do this: remove from packaging and wrap it in a kitchen towel (or use a tofu press to get out some of the water). This is an essential step for getting nice crispy air fryer tofu! If you’re using a kitchen towel, place something heavy on top of the wrapped tofu block. I like to use a couple cast iron skillets. This will help press out the water. Let this sit, being pressed, for 1-2 hours before continuing.
  • Cube the tofu into 1/2-1” pieces. Toss with oil, cornstarch, and marinade.
  • Air fryer instructions: Air fry at 375ºf for 12-15 minutes. You want to make sure that you don’t skip the air fryer preheating step. If yours doesn’t have a preheat function, set it to the desired temp and let it run for ~5 minutes.
  • Oven instructions: Preheat oven to 425ºf. Place on a lined baking sheet (spill mat or parchment paper) and bake for 35 minutes, turning once 20 minutes into the cooking time.
  • Cook rice per package instructions.

Assembly

  • Start with the bagged salad, layer on rice, arrange the tofu, and top it off with the salad kit toppings. Finally, drizzle the dressing over the dish and enjoy!

Recipe Notes:

  • Want to skip the tofu? Feel free to sub in any protein source.
  • If serving a larger crowd: May add more veggies/lettuce if serving multiple people
  • Rice: White or brown rice works well. Using a whole grain brown rice option can be a bit of added gentle nutrition with whole grains and fiber but if it’s not satisfying to you, skip it!
